Hellyers Road
Located in remote North West Tasmania, where the untamed Tarkine wilderness bounds Australia’s richest farmland, both nourished by the world’s purest air and rain, fresh from a 20,000km journey across the Southern Ocean.
Hellyers Road has been rooted in this place for eight decades - first as a dairy cooperative, then in 1997 drawing on our spirit of community and sense of place to establish Hellyers Road Distillery. Hellyers Road Distillery is Australia’s Oldest Operating Whisky Distillery.
Today, the second, third and fourth generations of those original farming families remain custodians of Hellyers Road. Marrying time-honoured tradition with innovation born of that remoteness, Hellyers Road has carved its own patient path to make Australia’s Finest Aged Whisky.
This 2.5hr tasting experience is perfect those wanting to sample the best that Tasmanian whisky has to offer.
Guests will receive a Hellyers Road Roaring Forties cocktail on arrival and sample 5 Hellyers Road whiskies, each paired with specially selected food items from Arcadia’s menu.

1. Roaring Forties
A bright, lively Hellyers Road expression that captures the wild coastal energy of Tasmania’s Roaring Forties winds. Expect crisp citrus, creamy malt, and gentle spice, carried on a clean maritime freshness.

2. Double Cask
Matured in a balance of American oak and French oak, this whisky brings depth and harmony. Vanilla sweetness meets toasted spice and subtle orchard fruits, creating a rounded, elegant dram.

3. Oloroso de Jerez 10-Year-Old
Rich, nutty, and indulgently sherried. Layers of dark fruits, roasted nuts, and warm oak mingle with Hellyers Road’s signature clean malt profile, delivering a refined and expressive Tasmanian sherry influence.

4. American Oak 12-Year-Old
Beautifully mature and gently complex, the 12-year-old showcases long oak development with notes of honey, vanilla cream, soft spice, and a lingering, velvety finish. A benchmark of Hellyers Road’s ageing potential.

5. Voyager 20-Year-Old
A rare glimpse into Tasmania’s early whisky era. Deeply matured with fortified fruit notes, old oak richness, and a luxurious, structured palate, this 20-year-old is both historic and astonishingly graceful.
